White Chocolate & Lime Cheesecake Bars

I have to admit that these easy to make white chocolate cheesecake bars were not too rich and had just the right amount of sweetness to be a delicious ending to our potluck barbecue dinner. This recipe was adapted from a recipe on

14 oz white chocolate, melted

22 oz chocolate cookies, (I used Newman-O’s)

Place the cookies in the bowl of a food processor and pulse into crumbs, about 1 minute.

Transfer to a medium bowl and stir in 4 T of the melted white chocolate.

Press mixture into a foil lined 9x13x2” pan and refrigerate while you make the filling.

1 Cup chilled heavy cream

2 8oz pkg. cream cheese

6 T sugar

4 T fresh squeezed lime juice

1 T finely grated lime peel

1 bar of white chocolate for curls, optional

Beat the cream until it forms peaks and set aside.

In another bowl, beat together cream cheese, sugar, lime juice and lime zest. Beat in remaining melted white chocolate and fold in whipped cream.

Spread mixture evenly over chocolate crust and chill for 2 hours minimum.

Using foil as aid, lift cheesecake out of pan and cut into bars, garnish with white chocolate curls if you like.
