figgy pudding

2 cups flour

2 sticks butter

1/2 cup brown sugar

1/2 cup white sugar

1/4 tsp salt

4 Tbs rum

1/3 cup orange juice

8 medium size fresh ripe figs, chopped in small pieces

1 tsp cinnamon

3/4 Cup sliced almonds

1. Blend flour, butter, 1/2 cup of sugar and salt into a coarse meal. Sprinkle 1 tablespoon of rum over mixture and stir together. Reserve 1 cup of mixture for topping.

2. Press flour mixture into an 11 x 7 pan and set aside.

3. In a medium bowl stir together figs, orange juice, cinnamon, 1/2 sugar and remaining 3 tablespoons of rum. Spread fig mixture over crust in pan. Reserve some of the liquid in bottom of bowl to sprinkle on topping.

4. Stir sliced almonds into reserved dough and drop by clumps over fig filling. Sprinkle reserved fig mixture liquid over topping.

Bake at 350 for 30 minutes until fruit bubbles and topping turns golden brown.
